Ingredients

  • 6 large Egg whites
  • 100 grams Lean ground beef
  • 1 small Onion
  • 0.5 medium Red bell pepper
  • 100 grams Mushrooms
  • 50 grams Spinach
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 30 grams Low-fat cheddar cheese
  • 2 sprays Olive oil spray

Directions

Step 1

Finely dice the onion and red bell pepper. Slice the mushrooms thinly.

Step 2

In a non-stick skillet, spray two bursts of olive oil spray, and warm over medium heat.

Step 3

Add the ground beef and cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through. Drain any excess fat if necessary.

Add the onion, red bell pepper, and mushrooms to the skillet with the ground beef. Sauté for an additional 5 minutes, or until the vegetables are soft and the onions are translucent.

Add the spinach to the skillet and mix with the other ingredients. Cook for 1-2 minutes until the spinach is wilted.
