Ingredients

  • 2 cups Cooked brown rice
  • 1 cup Lean ham, diced
  • 1 cup Frozen mixed vegetables

  • 0.5 cup Plain non-fat Greek yogurt
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Salt (optional)
  • 0.5 cup Whole wheat breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish with cooking spray or a light coat of olive oil.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Add the diced ham and frozen mixed vegetables to the skillet. Cook for another 3-4 minutes, stirring occasionally. Remove from heat once the vegetables are heated through.
