Ingredients

  • 1 cup Whole wheat flour
  • 2 cups Low-fat milk
  • 1 cup Jaggery, grated
  • 0.5 teaspoon Cardamom powder
  • 1 tablespoon Ghee (clarified butter)
  • 2 tablespoons Chopped almonds
  • 2 tablespoons Chopped pistachios

Directions

Step 1

Start by heating the low-fat milk in a saucepan over medium heat. Bring it to a gentle simmer and let it reduce to about 1.5 cups, stirring occasionally. This will take roughly 10 minutes.

Step 2

In a separate non-stick pan, add 1 tablespoon of ghee and let it melt over a low flame. Add the whole wheat flour and roast it, stirring continuously. This should take about 5-7 minutes until the flour is golden and emits a nutty aroma.

Step 3

Once the flour is roasted, slowly add the reduced milk to the pan, stirring continuously to avoid lumps.

Step 4

Next, add the grated jaggery to the mixture. Continue to stir until the jaggery is completely dissolved and well incorporated into the mixture, which will take around 3-4 minutes.

Step 5

Add the cardamom powder and mix well. Keep stirring the mixture until it thickens and starts to leave the sides of the pan. This should take another 5 minutes.

Step 6

Once thickened, transfer the mixture to a greased plate or a tray, spreading it evenly. Sprinkle the chopped almonds and pistachios evenly over the top, pressing them gently into the gudpak.

Step 7

Allow the mixture to cool at room temperature until set, which should take about 30 minutes.

Step 8

Once set, cut into desired shapes and serve. Store any leftovers in an airtight container.
