  • 1 can (20 oz) Young jackfruit
  • 400 ml Light coconut milk
  • 50 grams Palm sugar
  • 2 tablespoons Low-sodium soy sauce
  • 4 Shallots
  • 3 Garlic cloves
  • 3 Candlenuts
  • 2 inches Galangal
  • 3 Bay leaves
  • 0.5 teaspoon Kasuri methi (dried fenugreek leaves)
  • 1 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 500 ml Water

Directions

Step 1

Rinse the canned young jackfruit under running water to remove the brine. Drain well and set aside.

Step 2

Blend the shallots, garlic cloves, and candlenuts into a smooth paste using a food processor or mortar and pestle.

Step 3

Heat the vegetable oil in a large pot over medium heat. Add the blended paste and sauté for 3-4 minutes until fragrant.

Add the young jackfruit, galangal, bay leaves, and kasuri methi to the pot. Stir well to combine with the spice paste.
