  • 8 ounces Mushrooms (sliced, white or cremini)
  • 1 teaspoon Paprika
  • 2 tablespoons All-purpose flour
  • 2 cups Low-sodium chicken or turkey broth
  • 1 cup Low-fat sour cream
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 12 ounces Whole wheat egg noodles
  • 2 tablespoons Fresh parsley (chopped, for garnish, optional)

Directions

Step 1

Bring a large pot of water to boil and cook the whole wheat egg noodles according to package instructions. Drain and set aside.

In a large skillet or sauté pan, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
