  • 4 pieces mountain bread
  • 1 large zucchini
  • 1 large red bell pepper
  • 1 large yellow squash
  • 1 small eggplant
  • 1 medium red onion
  • 0 olive oil spray
  • 2 tablespoons balsamic vinegar
  • 0.5 cup fresh basil leaves
  • 2 teaspoons dijon mustard
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Cut the zucchini, red bell pepper, yellow squash, and eggplant into thin slices of approximately 1/4 inch.

Slice the red onion into rings about 1/4 inch thick.
