Ingredients

  • 1 pound Pork tenderloin
  • 2 tablespoons Honey
  • 2 tablespoons Low-sodium soy sauce
  • 3 cloves Garlic
  • 1 tablespoon Fresh lime juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Salt
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 medium Red onion
  • 8 Wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Trim excess fat from the pork tenderloin and cut it into 1-inch cubes.

Step 3

In a large bowl, combine the honey, low-sodium soy sauce, minced garlic, fresh lime juice, olive oil, ground black pepper, and salt. Mix well to create the marinade.

Step 4

Add the pork cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Step 5

Cut the red and green bell peppers and the red onion into 1-inch pieces.

Step 6

Remove the pork from the marinade, and reserve the marinade for basting.

Step 7

Thread the marinated pork, red and green bell peppers, and red onion onto the soaked skewers, alternating ingredients as desired.

Step 8

Preheat your grill to medium-high heat. Once preheated, place the skewers on the grill.

Step 9

Grill the skewers for 10-15 minutes, turning occasionally and basting with the reserved marinade, until the pork is cooked through and the vegetables are slightly charred.

Step 10

Remove the skewers from the grill and let them rest for a few minutes before serving.

Step 11

Serve hot, garnished with extra lime slices if desired.
