Ingredients

  • 1 piece Boneless skinless chicken breast
  • 1 teaspoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 slices Whole wheat panini bread
  • 1 ounce Low-fat mozzarella cheese
  • 0.5 cup Fresh spinach leaves
  • 0.25 cup Roasted red pepper slices
  • 1 spray Non-stick cooking spray

Directions

Step 1

Preheat a grill or grill pan over medium heat.

Step 2

Rub the chicken breast with olive oil and season with salt, black pepper, and garlic powder on both sides.

Step 3

Place the chicken breast on the grill and cook for about 6-7 minutes on each side until fully cooked and there is no pink in the center. Internal temperature should reach 165°F (74°C).

Step 4

Remove the chicken from the grill and let it rest for 5 minutes, then slice it thinly.

While the chicken is resting, preheat a panini press or another grill pan for the sandwich.

Spray one side of each slice of whole wheat panini bread with non-stick cooking spray.
