Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 4 pieces whole wheat flatbread
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium red bell pepper, sliced
  • 0.5 medium red onion, sliced
  • 0.5 cup low-fat Greek yogurt
  • 1 teaspoon dried oregano
  • 0.5 cup cucumber, diced
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup feta cheese, crumbled

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

In a shallow dish, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Place the chicken breasts in the marinade and turn to coat evenly. Marinate for at least 10 minutes.

Step 3

Place the chicken on the grill and cook for 6-8 minutes on each side or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes.

Step 4

While the chicken is resting, grill the red bell pepper and red onion for about 3-4 minutes on each side until tender and slightly charred.

Step 5

In a small bowl, mix the Greek yogurt with dried oregano. Set aside.

Step 6

Slice the grilled chicken into thin strips.

Step 7

To assemble the flatbreads, lay each whole wheat flatbread on a plate. Spread a heaping tablespoon of the yogurt mixture over each one.

Step 8

Top each flatbread with grilled chicken strips, grilled vegetables, diced cucumber, and crumbled feta cheese.

Step 9

Garnish with fresh parsley and serve warm.
