Ingredients

  • 2 cups Whole wheat flour
  • 1 teaspoon Salt
  • 1 cup Water
  • 1 tablespoon Olive oil
  • 4 cups Baby spinach
  • 1 cup Reduced-fat feta cheese
  • 1 small Onion
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Black pepper
  • 1 spritz Cooking spray

Directions

Step 1

In a large mixing bowl, combine whole wheat flour and salt. Gradually add the water and olive oil while stirring, until a smooth dough forms. Knead the dough on a lightly floured surface for about 5 minutes until elastic.

Cover the dough with a damp cloth and let it rest for 15 minutes.

Step 3

While the dough is resting, prepare the filling. Finely chop the onion and sauté it in a non-stick pan sprayed with cooking spray until translucent. Add the baby spinach and cook until wilted. Transfer to a bowl and let cool.
