Ingredients

  • 2 large Russet potatoes
  • 2 large Egg whites
  • 0.5 medium Onion
  • 0.25 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Garlic powder
  • 0 Non-stick cooking spray
  • 2 tablespoons Chives
  • 0.5 cup Low-fat yogurt (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.

Step 2

Peel and grate the large russet potatoes using a box grater. After grating, place them in a clean kitchen towel and squeeze out as much moisture as possible. This is essential to achieve a crispy texture.

Step 3

Finely chop the onion half and chives and set aside.

Step 4

In a large mixing bowl, combine the grated potatoes, chopped onion, and 2 egg whites. Mix well until ingredients are well incorporated.

Step 5

Add in 0.25 cup all-purpose flour, 0.5 teaspoon salt, 0.25 teaspoon black pepper, 0.5 teaspoon baking powder, and 0.25 teaspoon garlic powder. Stir until the mixture is evenly combined.

Step 6

Scoop about 2 tablespoons of the mixture and form it into a patty. Place it on the prepared baking sheet. Repeat with the remaining mixture, leaving a little space between each fritter.

Step 7

Once all the patties are formed and placed on the baking sheet, lightly spray the tops with non-stick cooking spray.

Step 8

Bake in the preheated oven for 15 minutes. Then, carefully flip each fritter and continue baking for an additional 15 minutes, or until the fritters are golden brown and crispy.

Step 9

Remove from the oven and sprinkle with chopped chives before serving.

Step 10

Serve warm with a side of low-fat yogurt for dipping, if desired.
