Ingredients

  • 6 medium Golden Delicious apples
  • 2 tablespoons Lemon juice
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 4 tablespoons Brown sugar
  • 0.5 cups Rolled oats
  • 0.25 cups Whole wheat flour
  • 2 tablespoons Unsweetened applesauce
  • 2 cups Non-fat milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cornstarch
  • 2 tablespoons Granulated sugar
  • 2 large Egg yolks

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9-inch baking dish.

Step 2

Peel, core, and thinly slice the Golden Delicious apples. Place them in a large mixing bowl.

Step 3

Toss the apple slices with lemon juice, ground cinnamon, ground nutmeg, and 2 tablespoons of brown sugar. Spread the apple mixture evenly into the prepared baking dish.

Step 4

In a separate bowl, combine rolled oats, whole wheat flour, and the remaining 2 tablespoons of brown sugar. Add the unsweetened applesauce and mix until crumbly.

Step 5

Sprinkle the oat mixture evenly over the apples. Place the dish in the oven and bake for 30 minutes, or until the topping is golden and the apples are tender.

Step 6

While the crisp bakes, prepare the low-fat custard. In a medium saucepan, whisk together non-fat milk, vanilla extract, and granulated sugar over medium heat until the sugar dissolves.

Step 7

In a small bowl, mix cornstarch with 2 tablespoons of cold milk to create a slurry. Gradually stir the cornstarch slurry into the saucepan and continue whisking until slightly thickened.

Step 8

In a heatproof bowl, whisk the egg yolks. Slowly pour about 1/4 cup of the hot milk mixture into the yolks while whisking constantly to temper them.

Step 9

Return the tempered egg mixture to the saucepan. Cook on low heat, stirring constantly, until the custard thickens and coats the back of a spoon (do not boil).

Step 10

Remove the custard from heat and let it cool slightly.

Step 11

To serve, spoon the warm apple crisp onto plates or bowls and drizzle with the prepared custard. Enjoy immediately!
