Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 0.5 teaspoons Baking Soda
  • 0.5 teaspoons Salt
  • 1 teaspoon Xanthan Gum
  • 1.5 cups Low-Fat Greek Yogurt
  • 2 large Egg Whites
  • 2 tablespoons Honey
  • 1 tablespoon Olive Oil
  • 0.25 cup Warm Water
  • 1 packet Instant Yeast

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a small bowl, combine 0.25 cup warm water and the packet of instant yeast. Stir gently and let it sit for about 5 minutes until frothy.

Step 3

In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, salt, and xanthan gum.

Step 4

In another bowl, combine the low-fat Greek yogurt, egg whites, honey, and olive oil. Whisk until well mixed.

Step 5

Add the frothy yeast mixture to the wet ingredients and mix until incorporated.

Step 6

Gradually add the wet ingredients to the dry ingredients, stirring continuously until a dough forms. The dough will be slightly sticky.

Step 7

Lightly flour your hands with gluten-free flour and gently knead the dough in the bowl until smooth.

Step 8

Divide the dough into 8 equal pieces and shape each piece into a ball. Place the dough balls on the prepared baking sheet, spacing them evenly.

Step 9

Cover the rolls loosely with a clean kitchen towel and let them rise in a warm place for about 15 minutes.

Step 10

Bake the rolls in the preheated oven for 20 minutes or until they are golden brown and sound hollow when tapped on the bottom.

Step 11

Remove from the oven and allow to cool slightly on a wire rack before serving.
