Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Whole wheat flour
  • 0.75 cups Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Low-fat plain yogurt
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 1 cups Fresh or frozen cranberries
  • 1 teaspoons Orange zest
  • 0.5 cups Powdered sugar
  • 1.5 tablespoons Orange juice

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly grease or line six mini loaf pans.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt. Whisk together to evenly distribute the dry ingredients.

In another bowl, whisk together the unsweetened applesauce, low-fat plain yogurt, egg, and vanilla extract.
