Ingredients

  • 200 grams All-purpose flour
  • 50 grams Whole wheat flour
  • 7 grams Instant yeast
  • 150 milliliters Skim milk
  • 30 grams Granulated sugar
  • 1 teaspoon Salt
  • 50 grams Unsweetened applesauce
  • 2 teaspoons Ground cinnamon
  • 30 grams Light brown sugar
  • 1 unit Egg white
  • 1 as needed Non-stick cooking spray

Directions

Step 1

In a mixing bowl, combine the all-purpose flour, whole wheat flour, instant yeast, and salt.

Step 2

Warm the skim milk until lukewarm (about 40°C or 104°F) and stir in the granulated sugar until dissolved.

Step 3

Add the warm milk mixture and unsweetened applesauce to the dry ingredients. Mix until a dough forms.

Step 4

Knead the dough on a floured surface for about 5 minutes until smooth and elastic. If the dough is sticky, add a little more flour.

Step 5

Place the dough in a lightly sprayed bowl and cover with a clean cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Step 6

Once risen, punch down the dough and roll it out on a floured surface into a rectangle measuring approximately 25x30 cm.

In a small bowl, mix the ground cinnamon and light brown sugar.

Brush the egg white over the rolled dough evenly, then sprinkle the cinnamon sugar mixture over the top.

Starting from one long side, roll the dough into a tight log. Slice into 12 equal pieces.

Place the dough slices cut side up on a baking tray lined with parchment paper, spacing them slightly apart.

Cover and let the rolls rise for another 20 minutes while preheating the oven to 180°C (350°F).

Bake for 12-15 minutes or until lightly golden brown.
