Ingredients

  • 3 cups All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 0.25 cup Granulated sugar
  • 0.5 teaspoon Salt
  • 1 cup Non-fat milk
  • 0.25 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 1.5 tablespoons Ground cinnamon
  • 0.5 cup Brown sugar
  • 1 Egg white
  • 1 tablespoon Powdered sugar
  • 1 teaspoon Water

Directions

Step 1

In a large bowl, combine 2 3/4 cups of flour, instant yeast, granulated sugar, and salt.

Step 2

In a small saucepan, warm the non-fat milk over low heat until it reaches about 110°F. Remove from heat and add unsweetened applesauce and vanilla extract.

Step 3

Pour the milk mixture into the flour mixture and stir to form a soft dough. If the dough is too sticky, gradually add the remaining 1/4 cup of flour.

Step 4

Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.

Step 5

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

In a small bowl, mix ground cinnamon and brown sugar for the filling.

Step 7

Punch down the risen dough and roll it out on a floured surface into a rectangle about 12x16 inches.

Step 8

Brush the rectangle with the egg white and evenly sprinkle the cinnamon-sugar mixture over it.

Step 9

Starting from the long side, roll the dough into a tight log. Cut the log into 24 slices.

Step 10

Place the slices on a parchment-lined baking sheet, spacing them about 1 inch apart, and cover with a cloth. Let them rise for another 20 minutes.

Step 11

Preheat the oven to 375°F.

Step 12

Bake the buns in the preheated oven for 12-15 minutes, or until golden brown.

Step 13

To make the glaze, mix the powdered sugar and water in a small bowl until smooth.

Step 14

Once the buns are baked and slightly cooled, drizzle the glaze over the top.
