Ingredients

  • 500 grams fresh spinach
  • 3 large garlic cloves
  • 1 tablespoon olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the fresh spinach thoroughly under cold water to remove any dirt or grit. Drain and set aside.

Step 2

Peel and finely mince the garlic cloves.

Step 3

In a large non-stick frying pan or wok, heat the olive oil over medium heat.

Step 4

Add the minced garlic and stir-fry for about 1 minute, or until the garlic is fragrant but not browned.

Step 5

Increase the heat to medium-high and add the spinach in batches, stirring continuously to avoid overcrowding the pan.

Step 6

Once all the spinach is added and has started to wilt, pour in the low-sodium soy sauce and lemon juice. Stir well to combine.

Step 7

Season the spinach with salt and black pepper, adjusting to taste if necessary.

Step 8

Continue to cook for an additional 2-3 minutes, or until the spinach is tender and bright green.

Step 9

Remove from heat and serve immediately as a side dish or over a bed of rice for a light meal.
