  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 3 large Bananas (ripe, mashed)
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Maple syrup (or honey)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened almond milk (or low-fat milk)
  • 1 cup Fresh or frozen blueberries (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.

Step 3

In a separate medium bowl, mash the ripe bananas well. Mix in the unsweetened applesauce, maple syrup, egg, vanilla extract, and almond milk until smooth and combined.
