  • 100 grams Whole wheat flour
  • 70 grams Brown sugar
  • 120 ml Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 300 grams Mixed berries (fresh or frozen)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Cinnamon

Directions

Step 1

Preheat your oven to 180°C (350°F) and line an 8x8-inch baking dish with parchment paper, leaving some overhang to easily lift the bars out later.

Step 2

In a medium bowl, mix together the rolled oats, whole wheat flour, and brown sugar.

Step 3

Stir in the unsweetened applesauce and vanilla extract until the mixture becomes crumbly yet holds together when pressed.

Step 4

Press two-thirds of the oat mixture evenly into the prepared baking dish to form the base and set the remaining mixture aside for the topping.

Step 5

In a saucepan over medium heat, combine the mixed berries, cornstarch, and lemon juice. Stir constantly until the mixture thickens and becomes bubbly.

Step 6

Pour the berry mixture evenly over the oat base in the baking dish.

Sprinkle the reserved oat mixture over the berry layer for the crumble topping.
