Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Low-fat milk
  • 1 tablespoon Cornstarch
  • 1 cup Low-fat cheddar cheese
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.25 teaspoon Paprika

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Wash and peel the potatoes, then cut them into thin strips, about 1/4 inch thick.

Step 3

Place the potato strips in a large bowl and add olive oil, salt, and black pepper. Toss to coat the fries evenly.

Step 4

Spread the fries in a single layer on the prepared baking sheet, making sure they are not touching or overlapping.

Step 5

Bake in the preheated oven for 30-35 minutes, flipping halfway through, until the fries are golden brown and crispy.

Step 6

While the fries are baking, prepare the cheese sauce. In a small saucepan, combine the low-fat milk and cornstarch. Whisk until the cornstarch is completely dissolved.

Step 7

Place the saucepan over medium heat and cook, stirring constantly, until the mixture starts to thicken, about 4-5 minutes.

Step 8

Reduce the heat to low, and add the low-fat cheddar cheese, garlic powder, onion powder, and paprika to the saucepan.

Step 9

Stir until the cheese is melted and the sauce is smooth and well combined. If the sauce is too thick, add a little more milk to reach the desired consistency.

Step 10

Remove the baked fries from the oven. Serve them immediately, drizzled with the cheese sauce or with the sauce on the side for dipping.
