In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
Add the Arborio rice to the pan, stirring well to coat in the oil. Cook for 2 minutes until the rice starts to look slightly translucent at the edges.
