Ingredients

  • 3 large Russet potatoes
  • 2 tablespoons Olive oil
  • 0.25 cup Low-fat milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 2 tablespoons Chopped parsley
  • 2 Egg whites
  • 1 cup Panko breadcrumbs
  • 0 Nonstick cooking spray

Directions

Step 1

Peel the russet potatoes and cut them into evenly sized chunks. Place them in a large pot, cover with water, and add a pinch of salt.

Bring the pot to a boil over high heat, then reduce to a simmer. Cook for about 15 minutes until the potatoes are tender and can be easily pierced with a fork.

Drain the potatoes and return them to the pot. Mash them with a potato masher or fork until smooth.
