Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Cold water
  • 2 tablespoons Olive oil
  • 0.5 pound Lean ground turkey
  • 1 chopped Small onion
  • 2 minced Garlic cloves
  • 0.5 chopped Red bell pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 2 tablespoons Tomato paste
  • 0.25 cup Low sodium chicken broth
  • 0.25 cup Cilantro
  • 0 Non-stick cooking spray
  • 1 Egg white

Directions

Step 1

In a large bowl, combine the flour, baking powder, and salt.

Step 2

Gradually add cold water and olive oil to the flour mixture, mixing until a dough forms.

Step 3

Knead the dough on a lightly floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate while preparing the filling.

Step 4

In a non-stick skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.

Step 5

Add the chopped onion, minced garlic, and chopped red bell pepper to the pan, and sauté until the vegetables are tender, about 5 minutes.

Step 6

Stir in the cumin, chili powder, tomato paste, low sodium chicken broth, and chopped cilantro. Cook for another 2-3 minutes until the mixture is well combined and slightly thickened.

Step 7

Preheat the air fryer to 375°F (190°C) or prepare a deep fryer with low fat oil if using. Meanwhile, roll out the dough to 1/8 inch thick and cut into 4-inch circles.

Step 8

Place a tablespoon of filling into the center of each dough circle.

Step 9

Brush the edges with egg white, fold the dough over to create a half-moon shape, and press the edges together with a fork to seal.

Step 10

Lightly spray the empanadas with non-stick cooking spray.

Step 11

Place the empanadas in a single layer in the air fryer basket (or deep fryer) and fry for 10 minutes until golden brown, turning halfway through the cooking time.

Step 12

Let cool slightly before serving.
