Ingredients

  • 200 grams rice vermicelli (beehoon)
  • 1 medium (julienned) carrot
  • 1 medium (julienned) red bell pepper
  • 100 grams (sliced diagonally) green beans
  • 1 small (thinly sliced) onion
  • 3 cloves (minced) garlic
  • 3 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 cup vegetable broth
  • 2 stalks (sliced) green onions
  • 4 large egg whites
  • 0 canola oil spray
  • 0 to taste black pepper
  • 0 to taste salt

Directions

Step 1

Soak the rice vermicelli in warm water for about 8-10 minutes until softened. Drain and set aside.

Step 2

In a large non-stick skillet or wok, lightly spray with canola oil and heat over medium heat.
