Ingredients

  • 500 grams Potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 2 tablespoons Fresh cilantro
  • 1 unit Green chilies

Directions

Step 1

Wash and peel the potatoes. Cut them into small cubes about 1-inch in size.

Step 2

Heat the olive oil in a non-stick pan over medium heat.

Step 3

Add mustard seeds and cumin seeds to the hot oil. Allow them to splutter for about 30 seconds.

Step 4

Add the cubed potatoes to the pan and stir well to coat with the spices.

Step 5

Sprinkle turmeric powder, red chili powder, and salt over the potatoes. Mix well to ensure even coating.

Step 6

Cover the pan with a lid and let the potatoes cook on medium heat for about 15 minutes. Stir occasionally to prevent sticking.

Step 7

Check if the potatoes are tender by inserting a fork. If they are almost cooked, remove the lid.

Step 8

Add coriander powder and garam masala, stirring gently to mix. Increase the heat to medium-high and sauté the potatoes for another 5-7 minutes until they have a slightly crispy outer layer.

Step 9

Turn off the heat and garnish the potatoes with chopped fresh cilantro and finely chopped green chilies.

Step 10

Serve the low fat fried aloo hot as a side dish or enjoy it as a light appetizer.
