Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup low-fat milk
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened applesauce
  • 0 cooking spray

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Stir well to ensure all dry ingredients are evenly mixed.

Step 2

In a separate medium bowl, whisk together the low-fat milk, egg white, vanilla extract, and unsweetened applesauce until smooth and well combined.

Step 3

Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and stir gently with a spatula until just combined. Be careful not to overmix; the batter may have some lumps and that's okay.

Step 4

Spray a non-stick skillet or griddle with cooking spray and heat over medium heat.

Step 5

Using a 1/4 cup measuring cup, pour batter onto the skillet for each hotcake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.

Step 6

Carefully flip the hotcakes with a spatula and cook the other side until golden brown, about another 2-3 minutes.

Step 7

Remove the hotcakes from the skillet and keep warm on a plate. Repeat the process with the remaining batter, reapplying cooking spray as needed between batches.

Step 8

Serve the hotcakes warm. They can be topped with your choice of fresh fruits, a drizzle of honey, or a light dusting of powdered sugar.
