Ingredients

  • 1 cup Gluten-free all-purpose flour blend
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Unsweetened almond milk or skim milk
  • 3 Egg whites
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Maple syrup or honey
  • 0 Cooking spray

Directions

Step 1

In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.

Step 2

In another bowl, mix the almond milk, egg whites, vanilla extract, and maple syrup until well combined.

Step 3

Make a well in the center of the dry ingredients and pour the wet ingredients into the well. Gently stir the mixture until just combined, being careful not to overmix. The batter may be slightly lumpy, which is fine.

Step 4

Preheat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray.

Step 5

Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, approximately 2-3 minutes.

Step 6

Carefully flip the pancakes with a spatula and cook for an additional 2-3 minutes until golden brown and cooked through.

Step 7

Transfer the cooked pancakes to a warm plate, and repeat with the remaining batter.

Step 8

Serve warm, topped with fresh fruits or a drizzle of additional maple syrup if desired.
