Ingredients

  • 2 cups water

  • 1 cup broccoli florets
  • 1 medium, sliced carrot
  • 1 medium, diced zucchini
  • 2 cloves, minced garlic
  • 1 cup low-sodium vegetable broth
  • 2 tablespoons soy sauce
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley
  • 2 stalks, chopped green onions

Directions

Step 1

Rinse the brown rice thoroughly under cold water and drain.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 20 minutes, or until the water is absorbed and the rice is tender.

While the rice is cooking, heat olive oil in a large skillet over medium heat.
