Ingredients

  • 1 cup Brown rice
  • 1 cup Black beans (canned, drained and rinsed)
  • 1 tablespoon Olive oil
  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic cloves (minced)
  • 1 medium Red bell pepper (chopped)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 cups Vegetable broth
  • 1 tablespoon Tomato paste
  • 1 medium Lime (juiced)
  • 0.25 cup Fresh cilantro (chopped)
  • 0 Salt (to taste)
  • 0 Black pepper (to taste)

Directions

Step 1

Rinse the brown rice under cold water and set aside.

Step 2

Heat the olive oil in a large saucepan over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 4

Stir in the minced garlic and chopped red bell pepper; continue to sauté for another 3 minutes.

Step 5

Add the ground cumin and ground coriander to the saucepan, stirring frequently until fragrant, about 1 minute.

Step 6

Stir in the rinsed brown rice, ensuring it is well coated with the onion and spice mixture.

Pour in the vegetable broth and add the tomato paste, stirring to combine thoroughly.
