Ingredients

  • 3 fresh peaches
  • 0.25 teaspoon olive oil spray
  • 6 cups mixed salad greens
  • 0.25 red onion
  • 0.25 cup goat cheese crumbles
  • 0.25 cup toasted pecans
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Halve and pit the peaches. Lightly spray or brush the cut sides of the peaches with olive oil spray.

Step 3

Place the peach halves cut side down on the grill. Grill for about 3-4 minutes or until grill marks appear and the peaches have softened slightly. Remove from the grill and let them cool while you prepare the rest of the salad.

Step 4

Thinly slice the red onion and set aside.

Step 5

In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and black pepper to create the vinaigrette.

Step 6

In a large salad bowl, combine mixed greens, sliced red onion, goat cheese crumbles, and toasted pecans.

Step 7

Once the peaches are cool enough to handle, slice each half into wedges and add to the salad.

Step 8

Drizzle the vinaigrette over the salad and toss gently to combine.

Step 9

Serve immediately and enjoy your fresh, low-fat roasted peach salad.
