  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.5 cup fresh cilantro
  • 1 medium lime

Directions

Step 1

Preheat the oven to 425°F (220°C).

Wash and scrub the red potatoes thoroughly, then cut them into small cubes, about 1/2 inch in size.

Place the potato cubes in a large mixing bowl and lightly spray them with olive oil, tossing to ensure even coating.
