  • 12 oz Fettuccine
  • 1 tbsp Olive oil
  • 1 lb Lean ground turkey

  • 1 large Celery stalk, diced

  • 2 tbsp Tomato paste
  • 28 oz Canned crushed tomatoes
  • 1 cup Low sodium chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Fresh Parmesan cheese, grated (optional for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.

In a large skillet or saucepan, heat the olive oil over medium heat.

Add the onion, carrot, and celery to the skillet, and cook, stirring occasionally, until the vegetables are soft, about 5-7 minutes.
