In a large mixing bowl, whisk together the chickpea flour and water until smooth. Ensure there are no lumps in the batter.
Add the salt and black pepper to the mixture and stir well to combine.
Cover the bowl with a kitchen towel and let the batter rest for at least 1 hour at room temperature. This allows the chickpea flour to fully absorb the water and will improve the texture of the farinata.
Preheat the oven to 475°F (245°C). Place a large ovenproof skillet (preferably cast iron) inside the oven to preheat as well.
Once the oven and skillet are hot, carefully remove the skillet and add 1 tablespoon of olive oil, swirling to coat the bottom evenly.
Give the batter a final stir and pour it into the hot skillet. Top with the optional rosemary leaves if using.
Bake in the oven for approximately 20 to 25 minutes or until the edges of the farinata are golden brown and slightly crispy.
Remove from the oven and brush the top with the remaining tablespoon of olive oil.
Allow it to cool slightly before slicing and serving. Enjoy the farinata warm or at room temperature.
