Ingredients

  • 2 pieces Whole wheat English muffins
  • 2 slices Turkey bacon
  • 4 large Egg whites
  • 1 cup Fresh spinach
  • 0.5 cup, shredded Low-fat cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Cooking spray

Directions

Step 1

Preheat a non-stick skillet over medium heat and lightly coat it with cooking spray.

Step 2

Add the turkey bacon slices to the skillet and cook for 3-4 minutes on each side until crisp. Remove and drain on paper towels.

Step 3

In the same skillet, add fresh spinach and cook for about 2 minutes until wilted. Remove and set aside.

Step 4

In a small bowl, whisk the egg whites with salt and black pepper.

Step 5

Reapply cooking spray to the skillet if needed, then pour in the egg whites. Cook on medium-low heat, gently stirring until just set. Remove from heat.

Step 6

Split the whole wheat English muffins and lightly toast them either in a toaster or on a skillet.
