Ingredients

  • 4 pieces Large eggs
  • 4 tablespoons Low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives
  • 4 pieces Whole wheat rolls
  • 4 pieces Lettuce leaves
  • 8 pieces Tomato slices

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with water. Bring the water to a boil over medium-high heat.

Step 2

Once the water reaches a boil, lower the heat and let the eggs simmer for about 10 minutes.

Step 3

After the eggs are cooked, remove the pan from the heat and drain the hot water. Immediately run cold water over the eggs to cool them quickly.

Step 4

Peel the cooled eggs and use a fork to mash them gently in a medium bowl until they reach your desired texture.

Step 5

To the mashed eggs, add the low-fat mayonnaise, Dijon mustard, salt, and black pepper. Mix until evenly combined.

Step 6

Chop the chives finely and add them to the egg mixture, stirring them in gently.

Step 7

Cut each whole wheat roll in half horizontally and place a lettuce leaf on the bottom half of each roll.

Step 8

Divide the egg mixture evenly among the rolls, spreading it over the lettuce leaves.

Step 9

Place two slices of tomato on top of the egg mixture on each roll.

Step 10

Close the roll with the top half of the bread. Serve immediately or wrap and store in the refrigerator until ready to serve.
