Ingredients

  • 1 Whole wheat English muffin
  • 2 large eggs Egg whites
  • 1 slice Low-fat cheddar cheese
  • 1 handful Spinach leaves
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Cooking spray

Directions

Step 1

Begin by splitting the whole wheat English muffin in half and lightly toasting it until golden brown.

Step 2

While the muffin is toasting, spray a small non-stick skillet with cooking spray and place it over medium heat.

Step 3

Pour the egg whites into the skillet, season them with salt and black pepper, and cook until they are just set, about 3-4 minutes. Stir occasionally to scramble.

Step 4

Place a slice of low-fat cheddar cheese on top of the cooked egg whites and allow it to melt slightly, about 1 minute.

Step 5

Add a handful of spinach leaves on top of the cheese. Cover the skillet with a lid for about 1 minute to wilt the spinach slightly.

Step 6

Once the English muffin is toasted, assemble the sandwich by placing the egg white, cheese, and spinach mixture between the muffin halves.

Step 7

Press the muffin halves together gently to secure all the ingredients, cut in half if desired, and serve immediately.
