Ingredients

  • 1 pound Lean ground turkey
  • 1 medium Onion, diced

  • 1 cup Canned low-sodium black beans, drained and rinsed
  • 1 cup Low-fat shredded cheddar cheese
  • 8 pieces Whole wheat tortillas
  • 2 cups Homemade or canned red enchilada sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with non-stick cooking spray and set aside.

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened.

Add minced garlic to the skillet and cook for 1 minute, stirring frequently to prevent burning.

Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
