  • 12 sheets Lasagna noodles
  • 2 cups Low-fat ricotta cheese
  • 2 cups Shredded part-skim mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 4 cups Fresh spinach
  • 3 cups Marinara sauce (low-sodium)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 1 teaspoon Dried Italian seasoning
  • 1 can Olive oil cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.

While the noodles are cooking, prepare the ricotta mixture. In a large mixing bowl, combine the low-fat ricotta cheese, half of the shredded mozzarella (1 cup), grated Parmesan, salt, black pepper, garlic powder, and Italian seasoning. Mix until well combined.

Lightly coat a 9x13-inch baking dish with olive oil cooking spray.

Spread a thin layer of marinara sauce (about 1/2 cup) across the bottom of the baking dish.
