  • 2 pounds Yukon Gold potatoes
  • 0.5 cup Low-fat milk

  • 2 large Egg yolks

Directions

Step 1

Peel and dice the Yukon Gold potatoes. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.

Reduce the heat to a simmer and cook the potatoes until tender, about 15-20 minutes.
