Rinse the rice and urad dal separately in ample water until it runs clear. This helps to remove excess starch.
In a large bowl, mix together the rinsed rice and 2 cups of water. In a smaller bowl, combine the urad dal and fenugreek seeds with 1 cup of water.
Soak the rice and dal mixtures separately for at least 6 hours or overnight for best results.
Drain both the rice and dal while reserving the soaking water.
In a blender, first grind the urad dal and fenugreek seeds with a bit of reserved soaking water until smooth and fluffy.
Next, grind the rice to a slightly coarse batter, using additional reserved water as needed.
Mix together the rice batter with the urad dal batter in a large bowl. The consistency should be similar to pancake batter.
Add salt and mix well. Cover the bowl and let the batter ferment overnight in a warm place until it doubles in size, making sure the batter becomes airy and has a slight sour smell.
Heat a non-stick skillet over medium heat. Lightly spray the skillet with cooking spray to ensure it’s evenly coated without excess oil.
Pour a ladleful of batter onto the skillet and spread it in a circular motion to form a thin pancake.
