Ingredients

  • 500 grams Ground lean turkey
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 200 ml Plain low-fat yogurt
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh mint leaves
  • 1 medium Tomato
  • 0.5 medium Cucumber
  • 4 large Whole wheat tortillas
  • 1 unit Olive oil spray
  • 4 unit Lettuce leaves

Directions

Step 1

Finely chop the onion and garlic. In a large mixing bowl, combine the ground turkey, chopped onion, garlic, cumin, coriander, paprika, salt, and pepper. Mix well using your hands until all ingredients are thoroughly blended.

Step 2

Shape the mixture into 8 small patties. Spray a non-stick frying pan with a little olive oil spray and heat over medium-high heat. Add the patties and cook for 4-5 minutes on each side or until they are browned and cooked through.

Step 3

While the patties are cooking, prepare the yogurt sauce. In a small bowl, combine the low-fat yogurt, lemon juice, and finely chopped fresh mint leaves. Stir until well mixed and set aside.

Slice the tomato and cucumber thinly. Set aside.

Warm the whole wheat tortillas either in a dry pan or microwave for a few seconds to make them pliable.

To assemble each wrap, place a lettuce leaf on a tortilla, top with two turkey patties, a few slices of tomato and cucumber, and drizzle with yogurt sauce.

Step 7

Fold the sides of the tortilla, then roll it up from the bottom to form a wrap. Repeat with the remaining tortillas and filling.

Step 8

Serve immediately while warm, accompanied by any remaining yogurt sauce for extra dipping if desired.
