Ingredients

  • 12 pieces large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 0.5 pieces red bell pepper, finely chopped
  • 1 stalk celery, finely chopped
  • 2 pieces green onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup whole wheat breadcrumbs
  • 4 ounces low-fat cream cheese, softened
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Butterfly each shrimp by cutting a slit along its back, being careful not to cut all the way through.

Step 3

In a skillet over medium heat, heat the olive oil and add the finely chopped red bell pepper and celery. Sauté for about 5 minutes until softened.

Step 4

Add the green onions and garlic to the skillet and cook for another 2 minutes until fragrant. Remove from heat.

Step 5

In a mixing bowl, combine the sautéed vegetables, whole wheat breadcrumbs, low-fat cream cheese, lemon zest, chopped parsley, black pepper, and salt. Mix until well blended.

Step 6

Stuff each butterfly-cut shrimp with a generous spoonful of the breadcrumb mixture, pressing gently to adhere.

Step 7

Place the stuffed shrimp on a baking sheet lined with parchment paper.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the shrimp are pink and the stuffing is golden brown.

Step 9

Serve warm as an appetizer or over a bed of mixed greens for a light main dish.
