Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoon Instant yeast
  • 50 grams Sugar
  • 150 milliliters Skim milk
  • 1 pinch Salt
  • 1 unit Egg whites
  • 20 grams Cornstarch
  • 250 milliliters Low-fat milk
  • 1 teaspoon Vanilla extract
  • 1 as needed Non-stick cooking spray

Directions

Step 1

In a mixing bowl, combine the all-purpose flour, instant yeast, 20 grams of sugar, and a pinch of salt. Mix well to distribute the yeast and sugar evenly.

Step 2

Warm the skim milk to lukewarm, not exceeding 110°F (43°C), and add it to the dry ingredients in the bowl.

Step 3

Flour your hands and knead the dough for about 10 minutes until it becomes smooth and elastic. You may need to add a little more flour if the dough is too sticky.

Step 4

Cover the dough with a damp cloth and let it rest in a warm place for about 1 hour or until it doubles in size.

Step 5

While the dough is rising, prepare the custard filling. In a saucepan, combine the remaining 30 grams of sugar, cornstarch, and egg whites, whisking until smooth.

Step 6

Gradually whisk in low-fat milk until well combined and turn on the heat to medium. Continuously whisk until the mixture thickens, approximately 5-7 minutes.

Step 7

Remove from heat and mix in the vanilla extract. Set the custard aside and let it cool completely.

Step 8

Once the dough has risen, punch it down and divide into 8 equal portions. Roll each piece into a ball.

Step 9

Flatten each dough ball with your palm and place about 1 tablespoon of the cooled custard in the center. Seal the dough around the custard, forming a bun and pinch to close tightly.

Step 10

Line a baking tray with parchment paper and lightly spray with non-stick cooking spray. Place the buns on the tray, ensuring enough space between each.

Step 11

Cover the buns and allow to proof for another 20 minutes.

Step 12

Preheat your oven to 350°F (175°C).

Step 13

Bake the buns for 15-20 minutes or until golden brown.

Step 14

Let the buns cool for a few minutes before serving.
