Ingredients

  • 1 large cucumber
  • 150 grams low-fat cream cheese
  • 100 grams smoked salmon
  • 1 tablespoon fresh dill
  • 1 teaspoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and dry the cucumber. Using a vegetable peeler or mandoline slicer, thinly slice the cucumber lengthwise into strips, avoiding the seeds. You should have about 12-16 strips.

Step 2

In a small bowl, combine the low-fat cream cheese, finely chopped fresh dill, lemon juice, salt, and black pepper. Mix until smooth and well combined.

Step 3

Lay out the cucumber strips on a clean work surface. Pat them dry with a paper towel if they seem too moist.

Step 4

Spread approximately 1 teaspoon of the cream cheese mixture evenly over each cucumber strip.

Step 5

Cut the smoked salmon into small pieces and place one or two pieces at one end of each cucumber strip.

Step 6

Carefully roll each cucumber strip starting from the end with the salmon, securing the roll tightly without squeezing out the filling.

Step 7

Stand the rolls upright on a serving platter, with the cut ends facing down. Serve immediately or refrigerate for up to 2 hours before serving.
