  • 1 medium red bell pepper
  • 0.5 cup low-fat Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup sunflower seeds

Directions

Step 1

First, thinly slice half of a head of red cabbage. Place the sliced cabbage into a large mixing bowl.

Dice the medium red bell pepper and add it to the salad ingredients in the bowl.

Step 5

In a separate small bowl, combine the low-fat Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper. Whisk together until smooth to create the low-fat dressing.

Step 6

Pour the dressing over the salad ingredients in the large bowl, and toss everything together until the vegetables are well coated.
