Ingredients

  • 8 ounces 99% lean ground turkey
  • 2 tablespoons low-sodium taco seasoning
  • 4 pieces large whole wheat tortillas
  • 4 pieces small corn tortillas
  • 1 cup fat-free refried beans
  • 0.5 cup reduced-fat sour cream
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup reduced-fat shredded cheddar cheese
  • 0.5 cup salsa
  • 1 sprays olive oil spray

Directions

Step 1

In a non-stick skillet over medium heat, cook the ground turkey until browned and cook through, about 5-7 minutes. Drain any excess fat and stir in the taco seasoning with 1/4 cup water. Let simmer for an additional 2-3 minutes until thickened. Remove from heat.

Step 2

Warm the corn tortillas slightly either in the microwave for 15-30 seconds or on a skillet over low heat to make them pliable.

Step 3

On a flat surface, lay out a whole wheat tortilla. Spread 1/4 cup of refried beans in the center.

Step 4

Layer continuing with 1/4 of the seasoned ground turkey, followed by a corn tortilla.
