Ingredients

  • 1 pound Turkey breast, boneless and skinless
  • 1 cup Wild rice, uncooked
  • 2 cups Low-sodium chicken broth
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Lightly spray the inside of your crock pot with non-stick cooking spray to prevent sticking.

Step 2

Rinse the wild rice under cold water and drain well.

Step 3

Place the uncooked wild rice, diced carrots, celery, and onion into the crock pot.

Step 4

Add the minced garlic, dried thyme, dried rosemary, salt, and black pepper into the crock pot. Mix to combine and evenly distribute the seasonings.

Step 5

Lay the turkey breast directly on top of the rice and vegetable mixture.

Step 6

Pour the low-sodium chicken broth over the turkey and rice mixture, ensuring everything is covered evenly.

Step 7

Cover the crock pot with its lid and set it to low heat. Cook for 4 hours, or until the turkey is fully cooked and the wild rice is tender.

Step 8

Once cooked, remove the turkey breast and shred it using two forks. Return the shredded turkey to the crock pot and mix it with the rice and vegetables.

Step 9

Taste and adjust seasonings if necessary. Serve warm, garnished with fresh chopped parsley, if desired.
