Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a large bowl, combine whole wheat flour, rolled oats, sunflower seeds, sesame seeds, flax seeds, and pumpkin seeds.
Add the salt and baking powder to the dry ingredients and mix well.
Pour the olive oil and water into the dry mixture, stirring until a dough forms. The dough should be sticky but manageable.
Place the dough between two sheets of parchment paper and roll it out to about 2mm thickness.
Carefully transfer the rolled dough onto the lined baking sheet. Peel off the top parchment layer.
Using a pizza cutter or sharp knife, score the dough into desired cracker shapes but do not cut all the way through.
Bake the crackers in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.
Once baked, remove them from the oven and allow them to cool completely on a wire rack.
Break or cut along the scored lines to separate the crackers and store them in an airtight container.
