Ingredients

  • 2 large Red onions
  • 250 ml Low-fat buttermilk
  • 100 g All-purpose flour
  • 100 g Whole wheat breadcrumbs
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 large Egg whites
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper. Lightly coat the parchment paper with cooking spray.

Step 2

Peel the red onions and slice them into 1/4 inch thick rings. Separate the slices into individual rings and set aside.

Step 3

Pour the low-fat buttermilk into a bowl and add the onion rings. Let them soak for about 10 minutes to absorb the flavor.

Step 4

In another bowl, combine the all-purpose flour, paprika, garlic powder, salt, and black pepper.

Step 5

In a third bowl, whisk the egg whites until they are slightly frothy.

Step 6

Spread the whole wheat breadcrumbs on a large plate.

Step 7

Remove onion rings from the buttermilk and shake off excess liquid. Dip each ring into the flour mixture, ensuring it's coated thoroughly.

Step 8

Next, dip the floured onion ring into the egg whites, allowing any excess to drip off.

Step 9

Coat the onion ring in breadcrumbs, pressing lightly to ensure they adhere, and place it on the prepared baking sheet.

Step 10

Repeat with all the onion rings, arranging them in a single layer on the baking sheet without overlapping.

Step 11

Lightly spray the tops of the onion rings with cooking spray.

Step 12

Bake in the preheated oven for 10 minutes, then carefully flip the onion rings and bake for an additional 10 minutes or until they are golden brown and crispy.

Step 13

Remove from the oven and serve immediately, paired with your favorite low-fat dipping sauce.
