  • 1 teaspoon vanilla extract
  • 1 as needed non-stick cooking spray
  • 1 teaspoon ground cinnamon

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix together the all-purpose flour, cornstarch, and baking powder.

Step 3

Slowly add the cold sparkling water into the dry ingredients, whisking continuously to create a smooth batter. Make sure there are no lumps.

Step 4

Add the honey and vanilla extract to the batter and whisk well to combine.

Step 5

Peel the bananas and cut each one into 3 equal pieces to create manageable chunks.

Step 6

Dip each banana piece into the batter, ensuring it's evenly coated.

Step 7

Place the coated banana pieces on the prepared baking sheet, leaving space between each piece.

Step 8

Lightly spray the banana pieces with non-stick cooking spray to help achieve a crispy texture.

Step 9

Bake in the preheated oven for about 18 to 20 minutes, or until the bananas are golden brown and crispy.
